About Martin Escobar:
Martin has been cooking in the Central Coast for more than 20 years. He worked in many Mexican Restaurants and also, he worked as a cook at Sizzler in their location in SLO and Arroyo Grande. Around 1991, he opened his first Mexican Restaurant called Pancho's Mexican Restaurant. His first location was in the Laguna Shopping Center in SLO, then he relocated in the shopping center by Johnson Ave and few years later he sold the restaurant. He moved north and started working for Lou and Shenly's in Cayucos as their chef. He learned to cook all their dishes and when the owners retired, Martin took over the restaurant. He kept the deli and the Italian menu for few years and then he decided to get rid of the deli and introduce a Mexican menu. Since there was no other Mexican Restaurant in Cayucos the restaurant was a success. He still kept the Italian menu (with the old recipes from Lou & Shenly's) for dinner which locals love. Now with the help of his wife and children, that have worked together through the years, opened their second location in Los Osos.
